Consumer preferences are changing worldwide, with more people taking an interest in cooking at home. As a result, demand is growing for reliable and versatile iron cookware. Iron frying pans, one of the most widely recognized types of iron cookware, are valued for their excellent heat retention, which makes them suitable for high-temperature cooking, as well as their long-lasting durability. However, many consumers remain hesitant to purchase them because they are often perceived as difficult to handle and time-consuming to maintain.
Yamamoto, who was responsible for the product’s development, explains, “One of the major challenges is that conventional iron frying pans no longer fully reflect the way people cook today, leading many consumers to view them as inconvenient and difficult to use.”
Could we create a product that preserves the unique cooking performance of iron while making it easier to use? This question became the starting point for the development of the new series.

What Is Nitrided Carbon Steel, the Key to the Product’s Development?
To address this challenge, we chose to use Nitrided Carbon Steel.
Nitrided Carbon Steel is an iron material that undergoes a specialized treatment in which nitrogen gas and heat are applied to the iron, forming a layer of Nitrided Carbon Steel on its surface. The resulting surface layer is highly resistant to oxidation and exceptionally robust, providing improved rust resistance and durability.
Yamamoto explains, “The appeal of an iron frying pan lies in the unique cooking performance that only iron can provide. We wanted to make it easier to use without compromising those qualities.”

The most notable feature of Nitrided Carbon Steel is its greater resistance to rust compared with conventional iron. Iron frying pans can be prone to rust after use, which has been one of the reasons some consumers are reluctant to choose them.
Yamamoto explains, “Even in Japan, we regularly receive complaints about rust from consumers who are unfamiliar with how to handle iron frying pans. We therefore want to communicate the convenience and benefits of iron cookware that is less prone to rust.”
The surface layer of Nitrided Carbon Steel is highly resistant to oxidation and rust, helping to reduce the maintenance required after use. The product was designed to be approachable and easy to use, even for consumers who have previously avoided iron frying pans because they seemed difficult to handle. The surface layer also does not peel off, contributing to a long service life.
